It is said that the undisputedly enlightened French monk Dom Pérignon discovered this most wonderful of human inventions by fermenting a bottle of wine so creatively and perfectly that it produced the first true bottle of Champagne. The French maintain that this is so but their compatriots across the Channel claim a Brit may have accomplished the same feat some 30 years earlier. Whatever the case may be with the original fermentation process, true Champagne must come from Champagne. And it is not only the most elegant wine ever made - it is an essential component of a well lived life. I have long subscribed to Napoleon’s maxim that one in victory, one deserves it and it defeat, one needs it!
